A Quickie

A while back, I asked one of the best cooks I know for advice on how to turn out good food quickly.  Her answer, which I now pass on to you: prepare and freeze sandwiches for toasting.  

If frozen sandwiches sound unappealing, I promise you, they come out beautifully - it's all in the toasting.

We have been living off them this week, thanks to one 10 minute  session on Sunday.  


Assemble: tuna (or chicken or ham or roasted vegetables), cheese, foccacia or Turkish bread, basil tomatoes, and butter.


Slice the bread, like so (the other half of the loaf is off camera).


Butter the crust sides, as on the left.


Sprinkle bottom half with grated cheese.


Top with tuna (I only use tuna packed in oil - anything else seems tasteless) and tomato slices.


Add basil (I added twice as much after taking this shot).  You could throw in some salt and pepper.


Top with more grated cheese (this way the whole thing sticks together).


Top with buttered bread. 


Slice into individual portions, wrap well and toss in the freezer.  Repeat with the other half-loaf.


The next time you are stuck for hot breakfast, lunch, dinner or snack, pull a sandwich out of the freezer and fire up the sandwich press or pannini press.  

If you don't have either, just grab a heavy bottomed pan (cast iron is best), melt some butter over medium heat, add the sandwich and weigh it down by placing a heavy pot (filled with canned goods) on top.  


Fry until the cheese has gone all melty.  

Slice and serve.

Too good.

    I'll give that sandwich a try. After we get through some of summer's corn, broccoli, grated zucchini, and unsauced tomatoes that are taking up the freezer. Maybe in January.
